3. Hygiene and the warewashing problem
This is the factor operators underweight most, and it is the strongest argument against reusable tubs in a typical shop.
A reusable container is only as safe as the last wash it received. That means a documented wash, rinse, and sanitize cycle, at correct temperature and chemical concentration, performed consistently by whoever is on shift, every single time, and then dried and stored somewhere that does not recontaminate it.
In a well-run commissary with a commercial warewasher, trained staff, and real supervision, that happens reliably. In a busy scoop shop at the end of a long summer Saturday, it sometimes does not.
The failure modes are ordinary rather than dramatic: a tub put away slightly damp, a scratched surface that no longer cleans properly, sanitizer mixed at the wrong strength, a rushed rinse. Scratches matter more than people expect, because worn plastic surfaces harbor residue in ways smooth new plastic does not.
Single-use corrugated removes this variable entirely. Every fill starts with a container that has never held food before. There is no wash step to get wrong, no cross-contamination path between one batch and the next, and no accumulating scratch damage.
4. Freezer performance
Both materials work in a freezer. The differences are in the details.
Properly coated corrugated is engineered for sustained sub-zero storage. The coating provides a food-safe moisture barrier, which is what stops the board absorbing moisture and losing structure. This is the critical distinction: plain, uncoated corrugated is not suitable for frozen dessert. It will absorb moisture, soften, and fail. Anyone comparing cardboard to plastic on the basis of an uncoated box is comparing the wrong thing.
Plastic is dimensionally stable across temperature, which is a genuine advantage. The trade-off is that many plastics become brittle when very cold, and a tub dropped at freezer temperature is far more likely to crack than the same tub dropped at room temperature. Cracked tubs then have to be identified and removed, which is another procedure to enforce.

5. Storage and space
This one is straightforward and frequently decisive.
Corrugated containers ship flat and assemble on site in seconds. A case of 50 flat blanks occupies a fraction of the space that 50 assembled containers would. You can hold weeks of packaging inventory in a modest amount of dry shelving.
Plastic tubs occupy their full volume from the day they arrive until the day they are retired, whether they are in use or sitting clean on a shelf. A reusable system needs enough tubs to cover product in production, product in display, product in back stock, and tubs in the wash cycle simultaneously. That is a lot of permanently occupied space.
For operations where commercial space is expensive, or where long replenishment cycles mean holding more inventory, this difference compounds quickly. It is one of the main reasons island and remote operators tend toward flat-packed formats.
6. Working out real cost per use
Here is the calculation to run for your own operation. Do not take anyone's word for the answer, including ours, because it genuinely depends on your labor costs and your volume.
Corrugated, per fill: container unit cost, plus a few seconds of assembly labor. That is the whole figure.
Plastic, per fill: tub cost divided by realistic number of uses before retirement, plus labor time per wash cycle at your hourly rate, plus water, energy, and chemical cost per cycle, plus an allowance for tubs lost, cracked, or retired early, plus the carrying cost of the storage space the tub fleet permanently occupies.
The variable that moves the answer most is labor. Where labor is cheap and volume is high and centralized, reusable systems can come out ahead. Where labor is expensive, or staff time is better spent serving customers than washing tubs, single-use usually wins clearly.
The second most important variable is realistic reuse count. Operators tend to assume a tub will last far longer than it does in practice. Base your figure on how many are actually still in service after a year, not on the theoretical lifespan.
7. Recyclability and waste
This is more nuanced than either side usually admits.
Corrugated is recyclable in principle and widely accepted, though coated board depends on whether local facilities accept it. Coatings vary considerably in how recyclable they are, and it is worth asking any supplier specifically what coating they use rather than accepting "recyclable" as a blanket claim.
Reusable plastic generates less material waste per fill if it genuinely achieves a high reuse count. That is a real environmental argument. It weakens considerably if tubs are retired early, and it comes with water, energy, and detergent consumption at every cycle that single-use does not have.
There is no honest universal answer here. A tub reused two hundred times in a commissary has a good case. A tub reused fifteen times before it cracks does not.
8. Presentation and branding
Corrugated can be custom printed, so every container carries your logo, flavor names, and colors. For a retail or wholesale product this is meaningful, because the container is doing brand work in a freezer case where a customer is choosing between options.
Plastic tubs are typically plain or carry an applied label. Labels add a step, and they do not survive freezer conditions and handling as reliably as print does.
If your product is displayed to end customers rather than only used behind the counter, print is a genuine advantage. If containers never leave your back of house, it matters much less.
9. When plastic is the right choice
There are real cases, and pretending otherwise would not help you decide.
- Closed-loop commissary production. A central kitchen producing for its own outlets, with a commercial warewasher, trained staff, and containers that never leave the system.
- Very high volume with cheap labor. If wash cycle labor is genuinely low cost and volumes are large, the per-fill math can favor reuse.
- Specific equipment requirements. Some production lines and hardening systems are built around particular tub geometries.
- Long-term deep storage. Product held frozen for extended periods in a controlled environment, where a rigid sealed container has advantages.
The common thread is control. Reusable systems work when you control the whole loop and can enforce the wash procedure. They struggle when containers leave your premises or when the wash step depends on whoever happens to be closing that night.
10. How to decide
Three questions settle it for most operations.
- Do your containers leave your premises? If yes, single-use. Reusable systems only work in closed loops.
- Can you guarantee the wash cycle, every time, on your worst day? If you are not confident, single-use removes the risk entirely.
