1. Why ice cream container sizing is so confusing

Frozen dessert is one of the few food categories where two measurement systems, two continents of equipment, and three different ways of describing capacity all collide on the same shop floor.

An American scoop shop thinks in gallons. A gelateria thinks in liters, because the cabinet almost certainly came from Italy and its pan wells were designed around metric pans. A frozen yogurt franchise thinks in cases and cups. A dairy producer thinks in pounds of finished product. All four might be buying the same physical box.

Then there is the naming problem. A container described as "3 gallon" is a nominal size, not a laboratory measurement. It means the container is designed to hold approximately three gallons of finished frozen product at typical overrun. Fill it with dense, low-overrun gelato and you will get a different weight than if you fill it with high-overrun soft serve mix, even though the volume is identical.

None of this matters until you order 20 cases of something that does not fit your dipping cabinet. Then it matters enormously.

The single most important number: your cabinet well dimensions. Before you order any container, measure the internal length, width, and depth of one well in your dipping cabinet or display freezer. Every decision below flows from those three numbers.

Two notes on the metric figures, because precision matters when you are matching to European equipment.

The 10 Liter RAPASTACK is exactly 10 liters, and 10 liters is 2.64 US gallons, so that name is accurate in both systems. The 12 Liter RAPASTACK is often shorthanded as "3 gallon," but 12 liters is actually 3.17 US gallons. If you are calculating batch yields against a fixed recipe, use 12 liters rather than 3 gallons or you will be off by about 6 percent per tub.

Going the other way, our 3 gallon containers are 11.4 liters, not 12. A gelateria replacing 12 liter Italian pans with 3 gallon boxes will lose roughly half a liter of capacity per pan. Across a 12 flavor cabinet that is about 7 liters of lost display volume, which may or may not matter depending on your turnover.

3. How many scoops does each container hold

Scoop yield is where sizing becomes a business decision rather than a measurement exercise, because it tells you how often staff have to change a pan during service.

The math is straightforward. A standard single scoop in most North American shops is 4 fluid ounces. Many gelaterias serve smaller, around 3 fluid ounces, while some premium scoop shops go to 5 or 6. Divide the container volume in fluid ounces by your serving size.

These are theoretical maximums. In practice you will not scrape a pan perfectly clean, and most operations change a pan when it is nearly empty rather than genuinely empty. Plan on realizing about 85 to 90 percent of the figures above.

Working rule: a busy single location scoop shop selling 300 scoops a day across 12 flavors averages 25 scoops per flavor per day. At 4 ounce servings, a 3 gallon container of an average flavor lasts about four days. A best seller might turn in a day and a half. A slow flavor might sit for two weeks, which is an argument for putting slow movers in a smaller container rather than letting product age in a large one.

4. Matching container shape to cabinet type

This is the step most buyers skip, and it is the one that causes returns.

Dipping cabinets

The classic North American dipping cabinet has rectangular wells sized around 3 gallon tubs. Rectangular containers use this space most efficiently because the well itself is rectangular. If you are running a standard dipping cabinet, a 3 gallon rectangle is usually the default answer.

Gelato display cases

Italian and Italian-style gelato cases are built around metric pans, most commonly 360 by 250 millimeters. Chest and reach-in freezers for back stock

Back of house storage is about cubic efficiency, not presentation. Square and rectangular containers stack with almost no wasted space. Octagons leave void at each corner. If a container will spend most of its life in back stock rather than on display, choose square or rectangular.

High volume production and distribution

6. Case quantities and how long an order lasts

Rapamar stocked corrugated containers are sold by the case, and each case contains 50 containers with lids. That low minimum exists so a single shop can order without committing to a full production run.

To work out how many cases you need, you need one number: how many containers you fill per week.

  • Small scoop shop, 12 flavors, moderate turnover. Perhaps 10 to 15 containers filled per week. One case covers roughly a month.
  • Busy scoop shop, 16 to 24 flavors, high summer turnover. Perhaps 40 to 60 per week. One case covers a week or less.
  • Small production kitchen supplying several outlets. Often 100 or more per week, which is where pallet quantities start making more sense than cases.

Order in a rhythm that keeps you comfortably ahead of demand without tying up cash or storage. For most single location shops that means ordering monthly in the off season and every two weeks in peak season.

Buying outside the United States?

Container format matters even more when replenishment takes longer. Operators in The Bahamas, the Turks and Caicos, and the Cayman Islands typically order in larger, less frequent cycles, which makes getting the size right the first time considerably more important.

7. Freezer space and stacking math

Corrugated containers ship flat and are assembled on site. This is worth understanding because it changes the storage calculation completely.

A case of 50 flat blanks occupies a fraction of the space that 50 assembled containers would. Assembly takes seconds per container. In practice this means you can hold several weeks of packaging inventory in the space that a few days of pre-formed containers would consume.

The practical implications:

  • Order in larger cycles without needing more storage space
  • Assemble only what you need for the current fill session
  • Keep unassembled stock in dry storage rather than climate-controlled space
  • Reduce the per-unit cost of freight, since you are shipping air far less efficiently than with pre-formed tubs

8. Common sizing mistakes

Ordering by name rather than by measurement

"3 gallon" from one supplier is not necessarily the same external footprint as "3 gallon" from another. Nominal capacity describes what goes inside, not what has to fit in your well. Always check dimensions.

Putting slow-moving flavors in large containers

A flavor that sells 5 scoops a day in a 3 gallon container will take nearly three weeks to clear. Frozen dessert does not spoil quickly, but texture degrades with time and freeze-thaw exposure. Put slow movers in 1 gallon or 7 quart containers and keep the product fresh.

Assuming metric and imperial equivalents are exact

As covered above, 3 gallons is 11.4 liters and 12 liters is 3.17 gallons. Those gaps compound across a full cabinet.

Forgetting the lid
